The AV on a Canon or A on a Nikon is the setting for aperture priority, now this is an easy way to start using your camera on manual.

It allows you to choose the aperture and the camera will set the shutterspeed automatically, it's in fact a semi automatic mode.

This allows the photographer to only think of one adjustment, so he can build up his knowledge bit by bit before going fully manual.
